Build Your Own FUN SUMMER SANDWICHES
That is what is for dinner at our house.

Last night I was looking through a recipe magazine and was overwhelmed by the various ways to bbq burgers. I am not so hip with red meat. I have a meat phobia. Have had my entire life. I do not like touching it. My husband is patient with me and gladly fires up the bbq and my phobia goes unnoticed. We work as a "team" he handles the meat and I do the rest. Last night I went into the fridge and let the boys pick out all the stuff they wanted for dinner. I am not sure they new what they were getting into, but we decided on
FUN SUMMER SANDWICHES.We started with sauteed red, yellow and green peppers, avocados, tomatoes, lettuce, black olives, roasted ham, bacon, mozzarella cheese, provolone cheese and some nice hard bread. The picture shows most of our spread.
And then each boy chose his masterpiece of a sandwich and had the meat and cheese melted. It was so fun to see them create their own versions and then I could not resist grabbing a picture of each of their precious faces about sink into the yummy creative designs.
Eric chose bacon, ham and melted cheese. He was not so keen on anything else but he did taste the avocado and decided tasting it was enough. Not on his sandwich.
Emerson chose "Macon" cheese, lettuce, and tomato. He also tasted the avocado, but thought it was to slimy to put on his sandwich. He said the lid might slide off.
David was happy to come home to a nice dinner after working hard all day. A smorgasbord of all his favorites stuffed between to hard pieces of bread. Meat and cheese. What more can a man ask for.
Ethan went for the triple decker super stacked sandwich. Three layers, of ham, cheese, tomatoes and then repeat. With lots of mustard. As you can see he is very proud of his master piece. Sadly the "white" cheese he put on is Provolone. Which he did not know. So after I melted it all for him and he took his first bite he had to start over. He is not a fan of Provolone and thought he was choosing Mozzarella.
Funny thing is I am not big on sandwiches. I made a lovely plate of mixed sauteed peppers and threw in some avocado, tomatoes and had a warm/cool veggie mix with some cheese melted on top. It looked very pretty. By the time everyone was seated I since forgot about picture taking. So no picture of mama's pretty plate.
Later Emily and a friend came home for dinner. They both made up their own sandwich versions. This evening was such a hit that I have decided once a week will be Fun Summer Sandwich night.
